Third-generation coffee grower Esneider Arias Suárez moved from Caldas to Valle del Cauca with his wife six years ago, establishing Finca Manzanares in Sevilla's El Manzano region. This thriving farm, devoted to innovation, features diverse coffee varieties like Colombia and exotic cultivars. Esneider's approach keeps coffee plantations young, encouraging consistent production and quality improvement. Collaboration with Juan Sebastián Gómez elevated processing methods, including selective harvesting, floating to remove defects, cherry fermentation at 18 Brix for ten days, and a combined mechanical-sun drying process. By embracing experimentation and excellence, Esneider has transformed Finca Manzanares into a true paradise of exceptional coffee.
