Balanced Cup of Caramel, Chocolate, and Fruit

Tinamit Tolimán started as a shared dream among Kaqchikel farmers in San Lucas Tolimán, a lakeside town ringed by volcanoes and the mirror-bright waters of Lake Atitlán. Realizing their slopes-rising from 1,500 to 2,000 meters-were perfect for specialty coffee, they banded together in 2016 and became a formal cooperative in 2018 to showcase their harvests. The 26 members now cultivate sweet, densely grown cherries, run a tiny roastery and storefront, and tinker with honey and natural fermentations while washed lots remain their cornerstone.
Committed to safeguarding the lake's fragile beauty, they craft coffees that are sustainable, nuanced, and full of promise for seasons to come.
